Ismail Hossain is a London-based Head Chef whose journey into the culinary world is defined by resilience, passion, and relentless hard work. Originally from Rajshahi, Bangladesh, Ismail now lives in Hammersmith with his wife Sarah and their daughter, balancing family life with a deep commitment to his craft.
Ismail’s career began at the very bottom, working as a kitchen porter at Barrica Tapas Bar. It was here he developed the foundations of discipline, speed, and respect for ingredients values that still define his cooking today. Without the means to attend culinary school, he carved his own path by working for free alongside experienced chefs, learning through observation, repetition, and determination.
Ismail’s cooking style is rooted in simplicity, seasonality, and deep respect for ingredients. He believes that less is more, allowing natural flavours to shine. He has a particular passion for slow cooking and open-fire techniques, bringing depth, authenticity, and bold character to his dishes. His flavour profile is heavily influenced by his Bangladeshi heritage, with salt, chilli, and garlic forming the backbone of his cooking.
A major milestone in his career came when he competed on MasterChef: The Professionals, where he reached the Semi-Finals in Season 18. This achievement not only showcased his technical ability but also his determination to compete at the highest level.
For Ismail, cooking is more than a profession, it is his purpose. He is driven by the desire to continuously grow, to honour those who have guided him, and to create food that connects with people on a deeper level. Whether developing menus, leading kitchen teams, or refining his craft, he approaches every challenge with heart and ambition.
Outside the kitchen, he enjoys spending time with his family, taking long walks, and travelling to explore new cultures and cuisines constantly finding inspiration in the world around him.
